If you do it without, you may end up with a more liquid-like shake than anything. It’s still possible to do without the xanthan gum, though.

You could, yes. It won’t be as thick, but the chia will definitely help. I’d suggest maybe letting the chia sit in the liquids for 30 minutes before blending, though.

Frozen berries would work – but as for Stevia, it’s pretty commonly used in low carb cooking. You can sub any sweetener you want, but just keep in mind that Stevia is ~600 times stronger than sugar, so you might need to have a few teaspoons worth of your sweetener if you are using a granulated type.

Rudy, supposedly if you melt the coconut oil first, then you can. But I’m not too sure about that. When I tried coconut oil, it just gave me little bits floating around.
