Sometimes I think that the best recipes are missed because they are simply dressed and look boring, which was the case when I first tested this recipe, but then I tasted it and WOW. In just five minutes and five steps, you can have a simple keto lunch salad that is bursting with flavor!

Five Minute Marinated Feta & Sun-dried Tomato Salad

This salad came together because one of my favorite snacks or small dinners is the marinated feta and olives from the salad bar at my local grocery store. That idea paired with some nutrient-packed spring greens and slivered almonds turned out to be one of my new go-to lunch salads!

The salty, creamy, feta is perfectly complemented with the slight sweetness from the sun-dried tomatoes. I love mixing oils with dried herbs when making dressings and marinades. I don’t always have fresh on hand but the oil and lemon juice bring the dried herbs back to life, marrying the flavors together perfectly. Top this salad with a bit more oil and slivered almonds and you have a simple, bright salad that gets better the longer it sits. How about that for the perfect meal prep?

Yields 2 servings of Five Minute Marinated Feta & Sun-dried Tomato Salad

The Preparation

  • 2 ounces feta, cubed
  • 15 grams sun-dried tomatoes, diced
  • ¼ teaspoon dried basil
  • ¼ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • 3 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 4 cups spring mix leafy greens
  • 1 ounce slivered almonds
  • Salt and pepper to taste

The Execution

1. Combine the cubed feta, sun-dried tomatoes, herbs, and 2/3 of the olive oil.

2. Toss gently to coat the feta in the herbs and oil.

3. Allow the feta to marinate while you wash and prep your greens and almonds, about five minutes.

4. In a large bowl or two small bowls, plate your greens and top with the marinated feta and slivered almonds.

5. Drizzle the remaining olive oil and lemon juice over the greens then toss to coat. Season with salt and pepper to taste!
