Okonomiyaki is a classic Japanese pancake, usually made from cabbage and drizzled in a savory sauce. However, the okonomiyaki is wheat based, meaning not keto friendly. So of course, here’s a keto friendly okonomiyaki chaffle so you can still enjoy this signature dish!
I kept as many as the signature ingredients I could, like the red cabbage, mayonnaise, and green onions. The sauce drizzled on top of the chaffles, sprinkled with green onions, and then a dash of furikake is really what makes this recipe!
Yields 2 servings of Keto Okonomiyaki Chaffles
The Preparation
Chaffles:
- 2 ounce mozzarella cheese
- 2 large egg
- 140 gram red cabbage, shredded
- 1 teaspoon fresh garlic, minced
- 1 medium green onion, for garnish
- Salt and pepper to taste
Sauce:
- 2 tablespoon mayonnaise
- 1/4 teaspoon dijon mustard
- 1/4 teaspoon soy sauce
- 1/4 teaspoon erythritol
- 1 teaspoon furikake, for garnish
The Execution
1. Measure out and prepare all the ingredients.
2. In a bowl, mix together the ingredients for the chaffles: mozzarella cheese, eggs, red cabbage, and minced garlic.
3. In a waffle maker, make the chaffles.
4. In a separate bowl, mix together the sauce by combining mayonnaise, dijon mustard, soy sauce, and erythritol. Stir to combine well.
5. Drizzle the sauce on top of the chaffles, garnish with green onions, and season with furikake. Enjoy!
