I’m sorry for the lack of response. Keto has become a lot more popular and I’ve been getting several hundred e-mails a day for the last year. I kind of left comments on the backburner for a while and finally had some time yesterday so I cleared out 600+ comments that were in the queue that hadn’t been answered yet. You could definitely do coconut butter and some chopped (or whole) nuts in there.

I want NUTS actually in my cookies and I think coconut BUTTER would work much better here. Nine months to answer a question??!

Almond butter helps keep things together. You could add the nuts and coconut oil to a food processor and make your own nut butter, though 🙂
