The erythritol that’s used will recrystallize and it will become kind of chunky. You can just microwave and stir it to get it back to a syrup consistency. If you use it in a nut bar, it should help as a binder once cooled, though.

Xylitol should work. Generically speaking, most leftovers you have in the kitchen can be kept for about 4 days. But, there isn’t really much in this recipe that would quickly go bad. I would guess that you are easily safe for 1-2 weeks.
